    Ingredients

    DOUGH:

3 1/2 cup freshly milled whole wheat (whatever wheat you choose will work)

    2 Tbsp brown sugar

1/4 cup olive oil or coconut oil

    1 1/4 cup warm water

~ Autolyse before adding salt and yeast ~

    1 tsp salt

    2 tsp yeast

    FILLING:

    1 cup brown sugar

    3 Tablespoons cinnamon

1/2 cup softened butter (I use salted)

    FROSTING:

    8 oz. softened cream cheese

1/2 cup butter (I use salted)

    1/4-1/2 cup honey

    Instructions

    1. Add all ingredients into mixer bowl (except salt and yeast), and mix with the beater attatchment until combined, cover and let sit in warm place to autolyse for at least 10 minutes.

    2. Once the autolyse process is complete, add the salt and yeast. Again, with the beater attachment, mix until combined and then place the dough hook on and knead for 7 minutes.

    3. Remove hook, cover bowl and place in warm place until dough doubles in size.

    4. Oil surface where you will prep the dough, also keep hands oiled.

    5. Roll the dough out in a 14×8-inch rectangle. Spread the softened butter on top. Mix together the cinnamon and brown sugar. Sprinkle it all over the dough. Roll up the dough to make a 14-inch log. Cut into 10–12 even rolls and arrange in a lightly buttered 9- or 10-inch baking dish.

    6. Cover with a clean towel and place cinnamon rolls in a warm place until they double in size. At this time, preheat oven to 350°F.

    7. Once doubled, warm 1/4 cup of milk and drizzle over each roll.

    8. Place in preheated (350°F) oven for 25 minutes or until light golden brown.

    9. Remove from oven to let cool.

    10. While the rolls are cooling, add butter and cream cheese to mixer and beat until smooth (a couple minutes). Once smooth, add the honey and again beat until smooth.

    11. Spread over cinnamon rolls.

    12. Serve and enjoy!

    Ingredients

    • 1 cup butter, softened to room temperature (I use salted). *If you’re short on butter, you can substitute half of it with coconut oil.
    • 3/4 cup brown sugar
    • 3/4 cup white sugar
    • 2 tsp vanilla extract (optional)
    • 2 eggs
    • 3 cups soft white wheat flour, freshly milled (hard red works well also)
    • 1 tsp baking soda

    • 1/2 cup shopped walnuts or pecans (optional)

    Instructions

    • Preheat oven to 350 F. Set aside cookie sheets.
    • Mill the flour.
    • Add all the ingredients to the bowl of the stand mixer, attach paddle and set on low speed until ingredients begin to mix. Set on medium speed and mix until well combined.
    • Scoop even-sized portions of cookie dough onto each cookie sheet. I used a small cookie scoop.
    • Bake for 10-12 minutes, removing the cookies from the oven when the edges just begin to turn golden brown.
    • Allow the cookies to continue cooling on the sheet pans for 2-3 minutes then transfer to a wire rack.
    • Enjoy warm or cool to room temperature then store in an airtight container for 2-3 days.

    <RECIPES <SOURDOUGH BAKED GOODS

These have been given the stamp of approval by my entire family, which is rare, lol! Easy + healthy + everyone likes them = a win and a recipe worth sharing!

    • Author: Around the Hearth
    • Prep Time: 10 minutes
    • Cook Time: 25-30 minutes
    • Total Time: 35-40 minutes
    • Yield: Never enough
    • Category: Snack
    • Method: Baking

    Ingredients

    • 1 cup sourdough discard
    • 8 tablespoon melted butter or olive oil
    • 1 cup parmesan cheese or cheddar cheese, shredded
    • ¼ cup freshly-milled flour (I prefer soft white wheat, but you could use hard red and they would still turn out great)
    • 1 teaspoon salt
    • 1 tablespoon bagel seasoning (optional) or 1 teaspoon more of salt

    Instructions

Heat oven to 350F and grease/butter a baking sheet. Combine discard, butter or oil, and cheese. Add in flour, salt, and bagel seasoning (if using). Mix to combine. Stand mixer works nicely for this. If dough is too sticky, add a little more flour. Place the dough on the middle of the baking sheet. Use a rolling pin to roll it out evenly, covering the entire surface of the baking sheet. Use a pastry cutter or knife to cut into roughly 1 inch squares. Leave as is or use a toothpick or fork to create a small hole in the center of each cracker.

Bake for 25-35 minutes. The bake time is all going to depend on how thick your crackers ended up being. You want them to be golden, puffed, crisp, and they will separate from each other. (they will crisp up even more as they rest)a

    <RECIPES <SOURDOUGH BAKED GOODS

This is one of my favorite sourdough recipes. It doesn’t require much effort and the end result is delicious! You’re not working around it’s schedule, it’s  working around yours. Happy Baking!

    • Author: Around the Hearth
    • Prep Time: 10 minutes
    • Cook Time: 60 minutes
    • Total Time: 70 minutes
    • Yield: 1 delicious loaf
    • Category: Dinner, Side Dish
    • Method: Baking

    Ingredients

    n large bowl, combine:

    • 12 oz / 340g unchlorinated warm water

    • 4 oz. / 113g sourdough starter

Stir to mix the starter into the water. Then add:

    • 0.7 oz / 20g salt

    • 1 lb 4 oz / 567g freshly milled flour of choice (I usually just use hard red wheat or soft white)

    Instructions

Stir until it’s too stiff to work with a spoon or dough whisk. use your hand to bring the ingredients to a  uniform dough. Dough will be moist but not too sticky. If it’s too sticky, as a little more dough. Oil the bowl and place dough in it. Cove with lid or plastic wrap.

Let rise at room temperature until at least doubled in bulk. It will usually take around 12 hours. If your house is warmer bulk rise may be faster and if the weather is colder, it could taker longer for the dough to bulk rise, it could even take 30 hours.

Unless you are using robust, regularly fed starter…once the dough has doubled, you have an additional window of 12ish hours that the dough can remain at room temperature before it needs to be shaped. (I typically rise about 20 hours before shaping, so I start my dough about 24 hours before I plan to serve bread.) If you are using robust starter, keep reading to understand about rise times.

The longer the dough rises, the better the flavor will be. You can also refrigerate this dough after mixing, for up to 4 days. I recommend 6 hours of countertop time before refrigerating. Your dough STILL must double in volume before shaping, though, and the refrigerator slows this process significantly. Remove from the fridge at least 2 hours before shaping…longer if the dough hasn’t doubled yet.

DO NOT proceed to shaping unless your dough has doubled! (Even if that takes 36 hours or longer, for some very sluggish starters or very cold kitchens.)

Shape the dough and place it into a GREASED baking vessel…a Dutch oven or loaf pan. Cover and rise on the counter-top for 90 minutes. (NOTE: If your initial rise was fast…less than about 12 hours…your second rise should only be 45-60 minutes. If your initial rise took longer than 30 hours, your second rise may need to be 120 minutes or longer. You will learn your starter’s ideal timing the more you bake with this method.)

(If your dough is too wet and sticky to handle, your starter is over 100% hydration. Discard all but 2 ounces of starter, feed with 4 ounces flour and 4 ounces of water, sit for 1 hour at room temp, then refrigerate. The next day, repeat this step. This will bring your starter closer to the 100% hydration rate that works for this recipe. Salvage THIS dough by kneading in a little more flour until the dough is firm enough to shape.)

Score the loaf, either with a razor blade or lame, or with scissors. Place into a cold (un-preheated) oven and turn the oven on to 425F / 220C oven and bake, covered, for 45 minutes. Remove the cover and bake an additional 15 minutes. Remove from baking vessel and cool fully before slicing.

This recipe can be baked in a 9″ loaf pan. Ideally, invert another loaf pan of the same size on top of the loaf pan containing the dough, to create the same moisture-concentrating effect as the Dutch oven. Bake for the same amount of time, starting in a cold oven and turning on to 425F, for 45 minutes covered with the other loaf pan, and 15 minutes uncovered.
